Marinated Bocconcini Salad is my recipe of the day. Today is the last day of Dairy Month blog postings this week. I already posted on Monday with my recipe for Macaroni Salad Caprese. And I also posted Wednesday with my recipe for Pineapple and Cottage Cheese Ambrosia. The post today finishes up the week.

Marinated cheese is very easy to make. And it is one of my favorites.

I enjoy having it as a salad and mixed into salad. Or as part of a cheese board with crackers. And possibly as part of a relish tray. Plus it makes a perfect side dish to bring as part of a potluck . Or something perfect for a wine and cheese picnic.

Ingredients

  • 8 ounces bocconcini or ciliegine mozzarella cheese
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon oil-packed sun-dried tomatoes julienned, drained
  • 1 tablespoon sun-dried tomato oil from jar
  • 1/2 teaspoon dried Italian seasoning
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic paste
  • 1 tablespoon chopped preserved lemons
  • 1 teaspoon small capers

Instructions

  • Stir and refrigerate several hours.
  • Serve at room temperature.
