I am sharing another old-fashioned cookie with you today. Oatmeal cookies are a perennial favorite of mine. I like the chewy texture, great flavor and hint of spice.

Besides the fact that they are so quick and easy to make? The perfect filler for any cookie jar.

Equipment

  • 1 cookie sheet

Ingredients

  • 1 cup softened unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1/2 cup sweetened flaked coconut
  • 1 cups diced pitted dates

Instructions

  • Preheat oven to 350F.
  • Mix butter with sugar until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Then add vanilla.
  • Mix flour, baking soda, salt, then add to the dough and mix until smooth.
  • Fold in the oats and dates.
  • Use a cookie scoop to drop dough onto parchment lines cookie sheets, slightly apart.
  • Bake for 14 minutes or until nicely browned.
  • Cool on the pan a few minutes, then finish cooling on a wire rack.
  • Repeat with all dough.
