Hawaiian Plate Lunch Macaroni Salad  is my recipe of the day with the blogging group Sunday Funday. We group weekly to post new recipes on a variety of common topics. This week we’re featuring recipes that are lunchbox favorites. Glad you could join us!

For my selection I decided to make some traditional Hawaiian macaroni salad which is often served with lunches. A few years back I had posted a not the recipe for Hawaiian macaroni salad. Which is really more just inspired by traditional Polynesian food that you might have eaten back in the ’50s and 60s. It included such things as ham and pineapple and such.

This one’s probably more like what you would get if you went to a Hawaiian restaurant. Or had in the Hawaiian Islands served at a luau. Often for lunches Hawaiians will serve macaroni salad or potato salad Hawaiian style along with some rice or you might get something like papaya salad. And this will be served even either with something like chicken or beef sticks or other Hawaiian entrees

Ingredients

  • 2 cups uncooked macaroni
  • 1/2 cup chopped onion
  • 1/2 cup grated carrot
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon celery seed
  • 1 scallion thinly sliced
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon freshly grated ginger
  • 1 cup mayonnaise

Instructions

  • Cook macaroni according to package directions then drain.
  • Combined drained macaroni with remaining ingredients thoroughly and chill before serving.
  • Makes five cups
