Ginger Chicken and Quinoa Soup is my recipe of the day (one of two) with the blogging group From Our Dinner Table. We get together and post weekly on various culinary topics then share our favorite recipes for those.

This week we are sharing soup recipes . It’s a perfect time of year for it, being the dead of winter. And personally, I haven’t tired of soups yet.

I decided to share one of my healthier recipes, which is a brothy Asian  soup that is very quick and easy to get from stove to table.

It uses cooked chicken and some veggies like straw mushrooms along with quinoa.

Quinoa is a very nutritious powerhouse grain. However it is something that I really don’t like eating all by itself. Is it childish of me to say I  prefer rice?

But we should eat more of these grains for the health benefit. Hiding them in soup  is the best way for me to do that.  And this soup really does make quinoa delicious!

Ingredients

  • 6 cups chicken broth
  • 1 tablespoon grated ginger
  • 1-1/2 teaspoons tamari or soy sauce
  • 1/2 teaspoon five-spice powder
  • 1 tablespoon toasted sesame oil
  • 1/2 cup thinly sliced bamboo shoots
  • 1 cup quinoa rinsed
  • 15 ounce can straw mushrooms drained
  • 2 cups chopped cooked chicken
  • 3 scallions sliced
  • 1 tomato peeled and chopped
  • 1 tablespoon cornstarch

Instructions

  • Place all ingredients in a saucepan and bring to a boil.
  • Reduce heat.
  • Cook covered 18-20 minutes.
