Salt and Vinegar Skillet Potatoes is my recipe of the day. Once againย  it is time for the bloggingย  groupย  Foodie Extravaganza.

Weย  joinย  upย  monthly and post recipes forย  various food holidays. Thisย  month is National Potatoes Month. So the gameย  is afoot for posting lots of potato filled recipes.

Forย  my choiceย  Iย  amย  sharingย  Salt and Vinegarย  Skilletย  Potatoes. Which isย  a type of hash brown that is chock fullย  of salty vinegarย  flavor. Thatย  is alsoย  a fav chip flavor ofย  mine.ย  It really brightensย  up thisย  potato side.

I find this type of potato is not only wonderful for breakfast. But itย  is also perfect as a side for fish. And burgers. Andย  Iย  could go on andย  on.

Par cooking theย  potatoesย  inย  a vinegary water cooks that flavor right in. Plus, the half cookedย  potatoes can easy beย  saved for later for a quick finish onย  busy nights.ย  Not toย  mentionย  that the timeย  to finish isย  much less than normal potatoes.

Ingredients
  

  • 2 pounds russet potatoes (peeled and diced)
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tablespoon salt
  • 2 tablespoons vegetable oil

Instructions
 

  • Place potatoes in a saucepan with water, vinegar and salt.
  • Bring to a boil and simmer ten minutes, then drain.
  • Place drained potatoes in a skillet with oil cook for ten minutes more, turning occasionally, until browned and crisp. Add additional seasoning if desired.

  2. We are big fans of both salt and vinegar chips and roasted potatoes so I may have to give this a try as an oven dish. Yours are such a lovely golden color, Sue!

  3. Definitely the perfect way to brighten up potatoes! They look so good. My kids also love the combination of salt and vinegar so I bet these will be a huge hit.
