Southern Style Ham Salad is my recipe of the day. I baked a ham recently, so of course I have leftovers. Figuring out what to make with that is one of my favorite things!

Of course I already posted a regular ham salad besides other sandwich spreads. But I was eager to try one Southern style, with hard-cooked eggs. I also threw in some pimiento peppers. Because it’s the right thig to do. As well as two different kinds of chopped pickle (dills and sweet relish). It certainly reminds me of my childhood!

Equipment

  • 1 Food Processor optional

Ingredients

  • 1 pound smoked ham finely minced or ground
  • 1 rib celery minced
  • 1/2 cup chopped red onion
  • 2 hard-cooked eggs peeled and chopped
  • 2 tablespoons diced pimiento peppers
  • 1/3 cup chopped dill pickle
  • 1/4 cup sweet pickle relish
  • 2 teaspoons grainy mustard
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon celery seed
  • 3/4 cup Duke's mayonnaise

Instructions

  • Prep ingredients- I use the food processor to finely chop most of these.
  • Stir together and chill before serving. I like this on soft white bread or on Ritz crackers.
  • Makes 4 cups/8 servings.
