Pea Salad with Ranch is my recipe of the day. I recently had bought several big bags of frozen peas on sale. And the time has come to start using some of those up. Do you have frozen peas you need to clear out?

There are any number of ways to make a pea salad. I decided to make mine by mixing up a Ranch dressing. It mixes up sour cream, mayonnaise and about half a small pack of Ranch dressing mix (powder) . You can save the rest of the pack for later. Those mixes really are a staple in the spice cabinet.

I run very hot water over my frozen peas in a sieve. It thaws them nicely and they don’t need more cooking. I don’t recommend using canned peas at all since they are too soft.

The salad is filled out with cubed cheddar cheese, crumbled bacon, diced onion, chopped eggs, diced white mushrooms, and pimiento peppers (jarred). I think it has a nice flavor.

This salad will go really nice with cold cut sandwiches for lunch. And it’s easy to pack and keep in the fridge. I hope you enjoy.

Ingredients

Pea Salad:

  • 4 cups frozen peas thawed
  • 4 ounces sharp cheddar cheese diced
  • 3 ounces chopped white mushrooms
  • 1/2 cup finely diced sweet onion
  • 2 hard-cooked eggs chopped
  • 4 slices bacon cooked and crumbled
  • 2 tablespoons diced pimiento peppers

Ranch Dressing:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons Ranch dressing mix
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Place ingredients for salad in a bowl.
  • Whisk together the dressing and gently fold into salad.
