Peach Poppy Seed Fruit Salad is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring peaches. Glad you could join us!

One of the things I love about Summer is all the local fresh produce. We enjoy stopping at area farmer’s markets throughout the season to pick from our local farmers’ bounty.

Peaches are a favorite. Nothing beats a tree-ripened peach for juicy goodness and flavor! Of course, there are many uses for peaches beyond eating out of hand and baking. They also go nicely on a salad, like today’s recipe.

Here I paired peaches with blueberries and cantaloupe, which are also coming in fresh this time of year. Then I made a delicious homemade poppyseed dressing. It’s a bit of a throwback, retro type of dressing. It’s very tasty, and goes wonderfully with the fruits.

You can use this dressing on pretty much any fruit salad. So as the wheel of the year turns and different fruits take center stage, the dressing is still on call.

Equipment

  • Salad bowl; quart shaker jar

Ingredients

Salad:

  • 5 ounces Baby Spring mix lettuce
  • 16 ounces diced cantaloupe
  • 2 medium peaches sliced
  • 1 cup fresh blueberries
  • 1/3 cup sliced toasted almonds
  • 3/4 cup dressing

Dressing (yield 2-1/2 cups dressing):

  • 1/2 cup peach nectar
  • 1/4 cup cider vinegar
  • 1-1/2 cups mayonnaise
  • 3/4 teaspoon onion powder
  • 1-1/2 teaspoons Dijon mustard
  • 5 tablespoons honey
  • 3 tablespoons poppy seed

Instructions

  • Mix dressing in a shaker.
  • Place salad in a bowl and use one third of dressing with it saving remaining dressing for another time, or you can size down to make less. Note the nutrition facts show the full amount of dressing so that part is off somewhat. Dressing can keep in fridge about a week.
