Blueberries with peaches are a favorite combination for me. So it was easy enough to use that as the basis for my blueberry recipe.
And since I do a lot of summer grilling, it made good sense to grill up some peaches then mix them with blueberries in a side salad. A little mild onion, a few toasted nuts and some goat cheese round it out with a blueberry vinaigrette.
You can use the goat cheese crumbles that come in a tub if you like to keep things easy.
Blueberry vinegar I make myself and you can use my recipe if you don’t have one. Or some stores will sell the vinegar. Another option is to just use wine vinegar.
But if you are making your own plan on doing that a few weeks in advance. It keeps a long time in a cool dry dark place so one batch will have you covered most of the summer.
The microgreens can be bought in many places now. I prefer the rocket sprouts (arugula) but you can use others or radish sprouts or alfalfa sprouts.
My dressing isn’t sugared so if you like it sweet, whisk a small amount of sugar in the vinegar to your taste. I find the fruit sweetens it perfectly for me.
