Roasted Red Pepper Hummus is my recipe of the day with the blogging group Sunday Funday. We post weekly on a theme which has a common topic. This week we are sharing chickpea or garbanzo bean recipes. Glad you could join us!

Roasted Red Pepper Hummus

Usually hummus is made with garbanzo beans (chickpeas) along with tahini, lemon juice and olive oil. But sometimes other ingredients can be added. In this case, roasted red peppers brighten up the flavor for an interesting change.

You can use jarred roasted peppers. Or you can do them yourself. If you blister or blacken the skins over a grill or comal, you can toss them into a bowl and cover with plastic wrap. The steam will help loosen the skins to make them easier to peel.

I also do recommend taking the few extra minutes to pinch the skins off the beans. The will make the hummus extra smooth without that gritty or lumpy feel from the skins. Once you see all the skins set aside, you’ll see why they are unappetizing. Reminds me of the skin shed off the little creature in the movie Alien. Oh my. Bye bye. ROFL!

Equipment

  • 1 Food Processor

Ingredients
  

  • 1 red bell pepper roasted and peeled
  • 2 tablespoons toasted sesame seeds
  • 15 ounces garbanzo beans drained (skins removed)
  • 2 tablespoons fresh lime juice
  • 1 garlic clove
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne pepper
  • 1/4 cup extra virgin olive oil

Instructions
 

  • Place sesame seeds in the food processor and pulse until you don't hear them anymore.
  • Add the roasted pepper, chickpeas, lime juice, garlic clove, salt, black pepper and cayenne pepper.
  • Run the food processor until it is pureed and smooth, then stream in the oil until smooth,
  • Garnish with additional sesame seeds and cayenne if you like, and serve with warm toasted pita bread, lavash, cut into serving pieces or crackers or crudites.

  1. I’ve never seen the movie alien but I have popped the skin off of chickpeas before so that’s a visual I can understand. 🤣 What a lovely color your hummus is, Sue!

    • Imagine a wet shed snakeskin. In the film they had it fall on Sigourney Weaver’s head, dropping from the ceiling.
