I love simple fish recipes and this is another of my favorites.

Melted jalapeno jelly is the basis for a sweet and spicy glaze that perfectly complements the fish.

Just pour it on and bake for a few short minutes and you’re there.

Don’t worry about removing the skin on the fish before cooking. Once it bakes it easily separates so it is not an issue at all. In fact, if you remove the skin before baking, it will leave the fish a bit dry and with slightly less flavor.

I use a home made no sugar added jalapeno jelly in this to cut calories but regular store bought will work just fine. Just don’t use the green type. It makes the food appear unattractive.

Sweet and Spicy Jalapeno Glazed Salmon

  • Servings: 2-4

Ingredients:
  • 1 pound salmon fillets
  • 1/4 cup red jalapeno jelly (don’t use green)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped cilantro

Method:

  1. Preheat oven to 425ºF.
  2. Place non-stick foil on a baking sheet.
  3. Place salmon skin side down on foil.
  4. Mix jelly with lime juice and warm either in the microwave or on the stove top until it is melted and liquified.
  5. Spoon melted jelly over fish.
  6. Bake at 425ºF. for 8-10 minutes.
  7. Garnish with cilantro before serving.
