Leprechaun Charms Cookies are my recipe of the day in celebration of St. Patrick’s Day.
Green for Luck
Perfectly fun and traditionally green for luck, these don’t have the lime or mint you might often find. Instead they are simply flavored with oats, white chocolate chips and marshmallows for a very mild-manned holiday treat.
Marshmallow Charms
The dried marshmallows are like the ones you might find in Lucky Charms cereals. You can find them at grocery stores, sometimes in the bulk foods section and sometimes in the baking aisle.
Everything else is readily available everywhere.
If you don’t care for food coloring you can still leave it out without affecting the flavor one bit. How lucky is that?
Holiday Fun
It might seem hard right now to think about luck and have fun with the pandemic going on.
But I think keeping a sweet treat or two around can really help lift the spirits.
Plus, these cookies are easy to make with a scoop and can be a great activity for the kids while they are out of school. Certainly they shouldn’t have to be deprived of having holiday fun.
Even without the color, these can be fun for them to make all year long. And hopefully soon all the concerns of the day will be behind us all and we can feel lucky and blessed.

Leprechaun Charms Cookies
Ingredients
- 1/2 cup soft butter
- 1/2 cup shortening
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon green food coloring (optional)
- 1 teaspoon vanilla extract
- 1-3/4 cups all-purpose flour
- 1/2 cup old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup mini charms dried marshmallows
- 9 ounces white chocolate chips
Instructions
- Preheat oven to 350F.
- Cream the sugars with the butter and shortening then stir in the eggs, food coloring and vanilla.
- Add the flour and oats and thoroughly mix.
- Stir in the dried marshmallows and white chips.
- Drop by rounded tablespoons or use a cookie scoop onto a parchment lined cookie sheet about one dozen per sheet.
- Bake for 12-14 minutes or until lightly browned at the edges.
- Cool a few minutes on the pan, then transfer to a wire rack to finish cooling.
