Slow Cooker Texas Chili is my recipe  of the day with  the blogging event National Slow Cooker Month. I will  be posting slow cooker recipes on both Monday and Wednesday  of this week to  commemorate this food holiday.

On Wednesday I will be sharing my recipe for slow cooker spicy Mexican cerveza beef, which is  cooked with beer.

But for today I am  sharing my  recipe for Texas style chili which I made with chopped beef picada and a homemade chile based adobo sauce in the crockpot. This type of chili will not have any beans in  it and is made with very  little in the way of anything tomato.

The  adobo sauce is definitely chile based using dried  chiles which are  soaked.  It is a type of chile ketchup without having much tomato at all. You  will often find  this sauce in  your  cans of chipotle peppers. But  since  it is not packed  with the smoked jalapenos  it will have a bit of a different taste. You can use this type of adobo sauce to pack with  jalapenos you have  smoked yourself . Although that is not what we are doing here.

Equipment

  • Slow Cooker or Crock Pot

Ingredients

Adobo Sauce:

  • 4 ounces dried guajillo chiles about 16-18, toasted, stems and seeds removed
  • 4 cups hot water
  • 1 clove garlic
  • 3 tablespoons ketchup
  • 1 tablespoon vinegar
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1/4 teaspoon ground cumin

Slow Cooker Chili:

  • 2 medium yellow onions chopped
  • 5-6 garlic cloves chopped
  • 2 pounds beef carne picada chopped (chuck roast or bottom round)
  • 2 tablespoons oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons ground cumin
  • adobo sauce see above

Instructions

  • Soak chiles in hot water 30 minutes.
  • Drain off two cups of liquid and discard.
  • Puree the remaining 2 cups of liquid with the chiles, and add in remaining ingredients for adobo sauce.
  • Brown meat, onions and garlic.
  • Add remaining ingredients and cook 8-10 hours on low.
