My recipe of the day is for bbq beef brisket chili made quickly (in about thirty minutes) using a ready-cooked bbq beef brisket.

Finding a Chili
At first I wasn’t sure what kind of chili I wanted to make since I had a number of the usual suspects already on the blog. Then I noticed a photo somewhere on a larger corporate site for a bbq type chili topped with Fritos and I was intrigued. I have seen bbq huts here and there that will serve chili on their menu.
So I thought I might give it a try using a frozen bbq beef mix and doctoring it up with ranch style beans and lots of seasonings. This is not any Texas type chili, nor is it anything you might find in an ICS cookoff, but as far as something a family might enjoy, it works. Especially with the cheese topper and the Fritos.

BBQ Beef Brisket Chili
Ingredients
- 1 14 ounce package Kroger frozen fully cooked barbecue beef brisket, thawed
- 2 10 ounces each cans Rotel tomatoes and green chilies
- 2 15 ounces each cans Ranch style beans
- 2 tablespoons cooking oil
- 1 large onion chopped
- 1/2 bell pepper chopped
- 2 teaspoons chopped garlic
- 1 cup frozen corn thawed
- 2 cups beef broth
- 4 teaspoons ground cumin
- 3 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- Shredded cheddar cheese
- Fritos corn chips
Instructions
- Heat the oil in a soup pot and saute the onion, peppers and garlic until the onion softens.
- Stir in the remaining ingredients (except cheese and fritos) and heat until flavors blend, about 15 minutes.
- Serve garnished with shredded cheddar cheese and frito chips.
And there you go….a filling, delicious chili in only half an hour. I have never tried those prepackaged beef briskets from Kroger but I can see that it would be a great thing to have in the freezer, especially since this chili sounds so good.
Somehow when I imagined it I thought it was in the deli case near the bacon- I had looked it up on the app. But it turns out it was frozen, but I bought it anyway. I have bought their precooked pork belly and liked that (and that is near the bacon) plus they have a few other things. Sometimes it’s fun to make up something quick and easy.
This sounds so delicious. I’m a total fan of brisket, and this one is so convenient! I love the Fritos on top too. Great minds!
Ranch Style Beans? I’m going to have to check those out the next time I’m in the canned bean aisle!!!
