Slow Cooker Pumpkin Chili

Our weather is going to take a decided turn southward this weekend when the temperatures dip to highs in the mid-sixties. It’s the kind of weather that everyone exclaims “Time to make a pot of chili!” and indeed it is. Being also #PumpkinWeek I have made this easy crockpot version with pumpkin in it. You might be surprised to find that it doesn’t really take the flavor to places it shouldn’t go, but it does help thicken it up a bit as well as adding the health advantage of extra beta carotene.

It also has some of my usual assortment of spices in it except I added ground coriander this time, which I have been using in quite a few different recipes, finding it very versatile. I think it rounds out the flavor of the pumpkin. And I think of this type of chili as more Texas homestyle (as opposed to Cincinnati chili which is really a Greek-American version) and have included beans in it but you can leave those out if you like. The pumpkin is not purist either but who is to say if it was not ever made that way early on? I think people who made chili back then used what they had, and pumpkin in autumn is what we have, and lots of it. Exactly why we have recipe roundups like this to use it all.

Slow Cooker Pumpkin Chili

Slow Cooker Pumpkin Chili


  • 3 pounds ground beef chuck (chili grind)
  • 1 large onion, chopped
  • 4 cloves garlic, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 28 ounce can crushed tomatoes
  • 14.5 ounce can diced tomatoes
  • 1-1/4 cups pumpkin puree
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1/2 teaspoon ground cayenne pepper
  • 16 ounce can red beans, kidney beans or other type of chili beans


  1. Brown beef with garlic and onion in a skillet and drain any fat.
  2. Place browned meat into the slow cooker with remaining ingredients (except beans) and stir to mix.
  3. Cover and cook on low for 8 hours,stirring occasionally, adding can of beans the last hour or so of cooking.
