Black eyed peas and okra (Instant  Pot) is my recipe of the day with the blogging group  Multicooker  Monday. We group together once  per  month  on  the third  Monday to share new recipes for small appliances,  such as the  Instant  Pot, Air Fryer, Sous Vide, Slow Cooker and  more.

For my  selection, I decided  to  pressure-braise  some black-eyed peas along  with  okra as a simple side dish or  main dish bean entrée.

This is perfect  with some  corn bread. You might  even  like to serve  some  collard greens alongside.  Good meats might be   fried catfish or something  like pan-fried  pork chops or smoked sausages. Anything  comfort food really.

If you have leftovers, this can also be thinned into a soup if you want something  to go with sandwiches or burgers.

Equipment

  • Instant Pot or Electric Pressure Cooker

Ingredients

  • 8 ounces dried black-eyed peas
  • 14.5 ounces canned diced tomatoes
  • 3 cups vegetable broth
  • 1 tablespoon chopped garlic
  • 1 medium onion chopped
  • 2 teaspoons Cajun spice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 8 ounces fresh okra sliced

Instructions

  • Place all ingredients (except okra) in the Instant Pot.
  • Cook on manual/high for 40 minutes with vent closed.
  • Use natural release (do not quick release pressure by opening vent).
  • Open cooker and add okra; cook on manual/high with vent closed for 10 minutes.
  • Use natural release again.
