Instant Pot Butter Beans and Country Ham

Our weather  is  finally cooling down,   at least for  the moment. With  the  onset of  autumn weather I  usually get hungry for a ham and beans dinner, often with corn bread or buttermilk  biscuits.

These butter beans are made from  dried baby limas. Cooked with the salted country ham they are quite delicious. You  should be able to locate country ham at farm markets that also sell meat. The type I  used had bits  and pieces rather than the whole steak.  So it should be reasonably priced.

I serve this as I would stew-  it has some vegetables in it from the mirepoix, but feel  free to  add other  veggies to your meal if you like. And like soup beans, this is  also  yummy topped with a little bit of chow chow.

Equipment

  • Instant Pot or Electric Pressure Cooker

Ingredients
  

  • 2 tablespoons bacon fat or oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup diced carrots
  • 1 bay leaf
  • 1 tablespoon chopped garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon chicken base
  • 12 ounces country ham for seasoning diced
  • 1 pound dried baby lima beans Camellia Brand
  • 6 cups hot water

Instructions
 

  • Saute veggies in bacon fat or oil.
  • Add remaining ingredients and place lid on Instant Pot and set to seal the valve.
  • Cook on Manual setting for 30 minutes at pressure (bean setting).
  • Use a natural release (don't open the valve for 15-20 minutes after shut-off).
