Greek Feta Spread (Kopanisti) is my recipe of the day with the blogging group Sunday Funday. We get together monthly to share recipes on a common theme. It is Stacy’s birthday so she has asked that we bring a dish (recipe) to a virtual potluck. If we were all together in person, including you dear reader, this would be the spread. Enjoy.

There is actually a type of cheese called Kopanisti but this recipe does not use it. However, it is inspired by that cheese and its flavors. It goes nicely on top of warm pita or crackers. And I also like it on top of a grilled lamb burger.

You can see I like these kind of dips and spreads! This savory cheese spread is perfect on wheat thins or with wedges of toasted pita bread. It is also great spread on whole wheat tortillas, with pieces of tender lettuce, ripe tomato and slivered red onion, then rolled up, for a tasty lunch wrap.

Equipment

  • Food Processor

Ingredients

  • 10 ounces crumbled feta cheese
  • 6 ounces crumbles soft goat cheese (aka chevre)
  • 7 ounce container Pine River chunky bleu flavor cold pack cheese food (or you might try substituting cream cheese and blue cheese mixed)
  • 1/2 cup extra virgin olive oil
  • 4 ounce jar pimento peppers (drained)
  • 2 teaspoons dried summer savory herb
  • 1 teaspoon black pepper

Instructions

  • Combine all ingredients in a food processor and run until smooth and creamy.
  • Chill to firm up mixture for one hour,
  • Serve with crackers or flatbread.
