Chocolate Chocolate Chip Cookies is my recipe of the day for the blogging event Valentine’s Day Chocolate Week. I was feeling extremely chocolate so decided on some double chocolate chippers.

What really makes these extra chocolatey is adding in some cocoa as part of the flour. The cocoa can take up being part of the flour if it is not too much. The other boosts come from the chips, and also the espresso powder, which accentuates chocolate flavor.
If you wished, you could also add a few more chips on top of the dough to show off the chocolate. I ran out, but there was enough of it inside the cookies that it wasn’t missed.

Chocolate Chocolate Chip Cookies
Equipment
- 1 cookie sheet
Ingredients
- 1 cup unsalted butter (at room temperature)
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs (at room temperature)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon instant espresso powder (or instant coffee)
- 1 teaspoon vanilla extract
- 2-1/4 cups all-purpose flour
- 3/4 cup unsweetened baking cocoa
- 10 ounces mini semi-sweet chocolate chips
Instructions
- Preheat oven to 375F.
- Cream together the butter with the sugars until smooth.
- Add eggs one at a time, then gradually add remaining ingredients, folding in the chocolate chips last.
- Scoop dough by rounded tablespoons or use a cookie scoop onto a parchment or silpat lined cookie sheet a couple of inches apart.
- Bake 11 minutes; cool on pan 5-10 minutes.
- Finish cooling on a wire rack.
