Oven Roasted Rotisserie Chicken is my recipe of the day, as a follow-up to my previous recipe (DIY Rotisserie Chicken Seasoning).

I enjoy using my own rotisserie seasoning on several kinds of chicken. I will use it as in this recipe, roasted in the oven propped up on a metal “beer can chicken” type grilling rack. It fits nicely into a pie plate or cake pan.
Other ways involve using the Bundt pan, or applying the rubs directly to chicken pieces. For bonafide rotisserie chicken, I have both an electric rotisserie, plus a Weber rotisserie for the kettle grill.
Using the seasoning at home satisfies my cravings for roasted chicken with that special flavor.
Unless I am lucky, I find most store-bought rotisserie to be overcooked or dry. And the chance of getting restaurant chicken at a place like Boston Market or Kenny Rodgers Roasters have long since disappeared.
Besides, with these rising prices, I am doing my best to keep prices down. And even with rising sticker prices on chicken, it is cheaper to do your own.
Oven Roasted Rotisserie Chicken with Old-Fashioned Bread and Celery Dressing and Cranberry Sauce
In the above photo, you can see it plated with my stuffing recipe. And that’s just canned cranberry sauce. I didn’t have any berries to make it from scratch.
As well, I served with green beans as a side. I really wanted some Caesar salad, but I would have had to run to the market to grab lettuce. Ugh. I hate running for just one thing.
But it’s all good, no matter what you like to serve it with. Very versatile.
I might even make one of these for Thanksgiving, since we are going to be a very small group this year. Maybe with one other main dish on the side.

Oven Roasted Rotisserie Chicken
Equipment
- 1 metal "beer can chicken" roasting stand
- 1 Instant read Thermometer
Ingredients
- 4-5 pound whole roasting chicken
- 2 tablespoons olive oil
- 2 tablespoons rotisserie seasoning
Instructions
- Preheat oven to 475F.
- Place chicken on a beer can chicken stand in a pie plate.
- Tuck wings behind the back.
- Brush with olive oil.
- Sprinkle with seasoning.
- Bake for 15 minutes at 475F then reduce heat to 375F.
- Continue baking for 60-75 minutes more or until internal temp in the thigh is 170 (use an instant read thermometer).
- Rest for 15 minutes before carving.
