My recipe of the day is for a quick and simple Caesar salad. This was originally posted sometime back, but I am updating the photos since I made this recently.

I understand some food ingredients might be very limited right now. For those who are used to the luxury of buying a bagged mix they can just toss and serve for a meal, it can be disappointing to run out of things.
But perhaps, like me, you have grabbed one of those plastic bags with several heads of Romaine lettuce inside, this can be perfect, and still be on the table in the wink of an eye.
I use croutons in this- you can make your own if you have some bread for it (brush with a seasoned garlic butter and toast in the oven) or maybe you like the bagged croutons. I do keep some of those on hand because if they aren’t very good for your salad, you can always pivot, crush them into crumb and use them to coat something like fish. Here is an example:
I like to use almonds when I am avoiding bread and cutting carbs. Purchased flavored toasted almonds do fine. I buy anchovy paste in the tube since it keeps a little longer than canned. Otherwise, everything is pretty much straight up and easy peasy.

Quick and SImple Caesar Salad
Ingredients
Dressing:
- 1 cup mayonnaise
- 1/2 cup sour cream or plain Greek yogurt
- 1/4 cup freshly grated parmesan cheese
- 1 tablespoon fresh lemon juice
- 1 tablespoon garlic minced
- 1 teaspoon anchovy paste
- Kosher salt to taste
- White pepper to taste
Salad:
- 6 cups torn romaine lettuce
- 1/2 cup croutons or 1/2 cup toasted almonds
- 1/2 cup grated parmesan cheese
Instructions
- Whisk together dressing ingredients thoroughly.
- Toss lettuce with desired amount of dressing.
- Sprinkle with croutons or almonds and top with extra Parmesan if desired.
- Refrigerate unused dressing tightly covered and use within one week.
