Caramel Pecan Cannoli is my recipe of the day for Spring Sweets Week.
Usually cannoli is filled with sweetened ricotta and maybe a little whipped cream (depending) and some chocolate chips and cherries for those who like.
Being blessed with a supply of pecans from Millican, one of our sponsors, I was quite happy to try them in cannoli since I had a box of shells on hand. And what better way to enjoy pecans than with caramel? I know we always love caramel around Easter and look for it in the chocolate filled eggs.
This is so simple to make- no baking required. And what with the stay-at-home order it’s just the two of us, so I can make the filling ahead and just fill the pastries as I need them without waste.

Filled with cinnamon pecans and chopped caramel, these crunchy desserts are a cinch and a perfect way to finish up a Friday night pizza dinner.

Caramel Pecan Cannoli
Ingredients
Shells and Filling:
- 4 ounce box Alessi cannoli shells contains 6
- 1-1/2 cups whole milk ricotta cheese
- 1/3 cup powdered sugar
- 3 ounces chopped soft caramels Werther's
- 1/3 cup Millican cinnamon pecans chopped
- 1/4 teaspoon ground cinnamon
Decoration:
- 3/4 cup chopped Millican cinnamon pecans
- powdered sugar
- caramel ice cream sauce Torani
Instructions
- Stir together filling and spoon into shells just prior to serving.
- Cover ends with chopped pecans.
- Garnish with sifted powdered sugar and caramel sauce (if desired).

My favorite spring sweet, actually, it’s my favorite sweet of all time, are my walnut tassies. I make them year round! Coming in second for spring would have to be my almond cardamom cake with mascarpone whipped cream! Also, anything with chocolate, marshmallow, and nuts… lol I basically love it all!
What a great way to incorporate the pecans. Loving this recipe. Do you think I could consider cannoli shells and necessity and make a grocery run? I better wait until I need milk and bread. Patience is a virtue.
There are recipes for cannoli shells- I just happened to have a box. This would probably also taste good as a spread on something like graham crackers.
My favorite spring treat is banana nut bread. We eat it year round, and it also a year round favorite of mine!!
