Roasted Garlic Sautéed Squash is my recipe of the day with the blogging group Foodie Extravaganza. We post monthly on topics relating to food holidays. This month we are doing National Garlic Month.

Today’s recipe is a favorite I enjoy cooking all year long. But even moreso in summer when squash such as crookneck and zucchini are  widely available.

Adding in some roasted garlic puts the flavor over the top. You can make it yourself (see my recipe for roasted garlic) or you can also buy it at markets that stock it on olive bars.

Besides the great flavor of sauteed squash, the simplicity of this  side dish makes it perfect for even weekday meals.

Equipment

  • 1 nonstick skillet

Ingredients

  • 2 tablespoons butter
  • 1 cup sliced onion
  • 1 pound summer squash yellow or zucchini, chopped
  • 1/2 cup roasted garlic cloves
  • 1/4 teaspoon dried marjoram
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Sautee squash and onion in butter with seasonings 5-10 minutes or until as tender as you like.
