Salmon with Garlic Tarragon Cream Sauce is my recipe of the day with the blogging group From Our Dinner Table. We get together on Sundays to post on various topics and then share fabulous recipes for those.
I know since Valentine’s Day is coming up, it is no surprise that date night dinner recipes are on our minds. Most of us will be celebrating at home. And what could be better than easy to make gourmet dinners on the table in under half an hour?
Since salmon is so easy to make and bake, it is a no-brainer as a date night dinner choice. Save all your energy to put into that over the top dessert, unless you like ice cream as much as I do!
Easy made salmon is wonderfully fancy topped with one of my favorite simple pan sauces. Wine, herbs and cream come together quickly as a flavorful topper.
I’d pair this with some simple pan roasted asparagus which you can do at the same time. Or perhaps a simple tossed salad and some wild rice.

Salmon with Garlic Tarragon Cream Sauce
Ingredients
- 20 ounces salmon fillets (2 10-ounce portions)
- 3 tablespoons butter
- 1/4 cup dry white wine
- 1/2 cup roasted garlic
- pinch salt and black pepper
- 2 tablespoons lemon juice
- 1/4 cup heavy cream
- 1 teaspoon minced fresh tarragon
Instructions
- Preheat oven to 425F.
- Place salmon on a baking sheet and season with salt and pepper and drizzle lightly with olive oil.
- Bake for 10-12 minutes or until fish flakes easily.
- While fish bakes, heat butter and roasted garlic in a small saucepan and stir in the wine and let cook briefly to cook off alcohol vapors.
- Add remaining ingredients and heat until just warmed through, but do not boil.
- Serve sauce over fish.
