Parmesan Ranch Noodle Kugel is my recipe of the day. Hanukkah is coming up! And whether you celebrate those festivities or something else, this noodle side dish is the perfect accompaniment for any meal.

This casserole is kept moist by the addition of eggs and cottage cheese. Plus Parmesan cheese and Ranch dressing are added to push the flavor over the top.

Cottage cheese is wonderful with noodles. If you have ever tried a variation of lasagna with cottage cheese you might already be in love!

The yogurt adds a little tang that might otherwise be accounted for with a little vinegar. But for a milder flavor you can always use sour cream. It depends on the yogurt really. As some are tangier than others. But you can taste your brand or  what you made at home and decide for yourself.

I served my noodles warm and broke them up a bit in the dish. You will find as the noodles cool they stick together more. Or especially in a reheat, they will be better sliced into squares (like a lasagna).

Equipment

  • Oblong casserole dish

Ingredients

  • 8 ounces egg noodles cooked according to package directions and drained
  • 1 cup thick ranch dressing
  • 2 large eggs lightly beaten
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried marjoram
  • 1 cup large curd cottage cheese
  • 1 cup grated Parmesan cheese
  • 1 cup plain Greek yogurt or sour cream
  • 1/4 cup whole milk
  • 1/2 cup dried breadcrumbs
  • 2 tablespoons melted butter

Instructions

  • Preheat oven to 350F.
  • Cook noodles according to package directions in boiling salted water; rinse and drain.
  • Spray baking dish with nonstick spray or coat with soft butter.
  • In a large mixing bowl, toss cooked noodles with ranch dressing, eggs, garlic, salt, pepper, marjoram, cottage cheese, Parmesan cheese, yogurt (or sour cream), and milk.
  • Place mixture into casserole dish.
  • Sprinkle top with dried breadcrumbs.
  • Drizzle with melted butter.
  • Bake, uncovered, for 55-60 minutes or until breadcrumbs are golden brown.
  • Serve hot or at room temperature.
