My recipe of the day is  for a slow cooker – crockpot coca-cola  beef brisket, cooked in a holiday type  sauce with tomatoes and coca-cola. Perfect for my Jewish friends celebrating Rosh Hashanah  (Sept.29th) but you don’t have to be  Jewish to  love brisket.  I mean, I am not, but it is a favorite  of mine (especially on the smoker as  bbq).

Briskets can be  pretty big, and truthfully, this one is a section as they cut it  up at  the  market.  You can also get  them   whole (but  a whole brisket isn’t  going to fit  in  any crockpot- and  if you have that, consider several crockpots).

What is a Brisket?

The brisket, if for some  reason you have not cooked before, is the same kind of cut used for corned  beef, except with the one, it is spiced up and also  treated with pink curing salt. So  this one  is  not  going to taste like that at all.

And mine  cooked in 6 hours- and you’ll need to watch yours and check it. I’ve had some  brisket that was tougher and wanted more time, but this one  was okay. If by some unfortunate event you leave it  in for 10-12 hours,  don’t blame me if it falls apart  (and it will if you overcook it).  I’ve seen photos from very prominent chefs and bloggers where it was just crumbled into…well crap.

Make Things Easy to Slice

If you chill it,  the slicing is much easier (and this is true for most roasts) and slicing across the grain at an angle, thin as you can  manage, is important. If you look  at the meat you can see the meat  fibers like  long strings. Cutting across the grain means those fibers get sliced short, so the meat is not  so tough. You don’t want to be able to pull off strings like string cheese.

So if you are cutting this into  sections to fit the crock, take it into account how you will be slicing  it later, as you don’t  want to end up with some  odd angle.  You want a flat side facing those strings so they will  in fact cut short.

Mine was tender as I have said,  but if by some misfortune you have got one  of those made “out of shoe leather” as my mom would have said,  pop those tough slices into a pan with some  sauce, cover it with foil or a pan lid, and bake it  until  it is  just tender then (but not so long it cooks  apart).  Just  like steaks, on occasion we get stuck  with a tough old bull.

Equipment

  • Slow Cooker or Crockpot

Ingredients

  • 4-1/2 pounds beef flat cut brisket
  • 2 tablespoons oil
  • 1 large onion
  • 28 ounce can crushed fire-roasted tomatoes
  • 12 ounce bottle Mexican Coke with cane sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • 2 teaspoons celery seed
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  • Heat oil in a large pan and sear brisket on both sides, then remove.
  • Add onion to the pan and cook until softened.
  • Stir up the sauce ingredients and place some in the bottom of the crock, topping with the beef.
  • If it doesn't fit (I used a large oval and it just fit) then cut it into sections to fit.
  • Top with the onions and remaining sauce.
  • Cover and cook on low for 6 hours or until it is fork tender.
  • Allow brisket to rest (I chill mine overnight and reheat the next day as it both slices and tastes better).
  • Thicken sauce with a cornstarch slurry if you like to use as a gravy for noodles or potatoes.
  • Slice the beef at a 45 degree angle across the grain (this means the long strings in the meat will be cut very short).
