Dixie Crystals normally provides lots of all kinds of sugar but for this round of Pumpkin Week opted to send me provisions from Amazon, of which I chose a selection of vanillas, still having some of their wonderful product on hand to use as well.

Amish Pumpkin Bars with Cream Cheese Frosting

Ingredients
  

Amish Pumpkin Bars

  • 16 ounce can pumpkin not pie mix
  • 1-3/4 cups Dixie Crystals granulated sugar
  • 4 large eggs at room temp
  • 1 cup melted cooled butter
  • 1 teaspoon vanilla paste or extract
  • 2-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1-1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup toasted chopped pecans
  • 1/2 cup chopped raisins
  • 1/4 cup chopped crystallized ginger

Cream Cheese Frosting

  • 8 ounce package cream cheese at room temp
  • 2 ounces unsalted butter softened
  • 3-1/2 cups sifted Dixie Crystals confectioner's sugar measure after sifting
  • 2 teaspoons vanilla paste or extract
  • 1 tablespoon milk

Decor

  • 11 ounces Brachs mellowcreme pumpkins candies
  • 2 ounces Sweets & Treats autumn mix sprinkles

Instructions
 

  • Preheat oven to 350F.
  • Line a 12x16x1 inch baking pan with parchment paper and spray liberally with nonstick cooking spray or wipe with butter.
  • Add the pumpkin, granulated sugar, eggs, cooled melted butter and vanilla to the mixer bowl and blend.
  • Gradually add the flour, baking soda, baking powder, salt and spices, mixing to form a batter.
  • Scrape down the bowl and fold in the chopped pecans, raisins and crystallized ginger.
  • Spread evenly on the parchment.
  • Bake for 30 minutes or until a toothpick tests in the center without wet batter.
  • Cool completely.
  • Whisk together ingredients for the frosting until smooth and spread over cooled pumpkin bars.
  • Sprinkle with Sweets & Treats baking decor and arrange mellowcreme pumpkins on uncut bars, 4x6 for twenty four.
  • Allow the frosting to set up for about 45 minutes, then slice into squares.
  • Store in an airtight container, refrigerated, until needed.

Amish Pumpkin Bars with Cream Cheese Frosting

  1. I’ve never done much baking with pumpkin although after reading this I will definitely be giving it a go 🙂 My favourite pumpkin recipe is pumpkin & chilli soup. Basically just made by roasting pumpkin segments until soft. Then throw onion, garlic, chilli, olive oil into a pan to soften, once soft add 1/2 tub of creme fraiche. Then throw everything into a blender with some added chilli flakes & wizz til smooth. Tastes amazing! 🙂
