Meltaway Cookies is my recipe of the day for the annual blogging event Christmas Cookies Week. My blogging friends and I have been doing this one for a few years now. Itโ€™s always something I look forwardย  to. Especially since cookie baking is so much fun.

Earlier I shared my recipe for Mandarin Orange White Chocolate Chip Cookies and the white chocolate fun continued with Peanut Butter Brownie Bombs. Then Wednesdayโ€™s fun had us making the Easiest Sugar Sprinkle Cookies with your favorite jimmies or nonpareils.

Equipment

  • cookie sheet and parchment paper

Ingredients
  

Cookie Dough:

  • 1 cup unsalted butter (at room temperature)
  • 3/4 cup sifted powdered sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1-1/4 cups cake flour

Other:

  • Sifted powdered sugar (as needed)

Instructions
 

  • Preheat oven to 350F.
  • Mix together cookie dough ingredients until smooth.
  • Use a one tablespoon scoop per cookie and place on a parchment paper lined cookie sheet.
  • Flatten with a glass spritzed with nonstick spray then dipped in cornstarch.
  • Bake for 12 minutes.
  • When cookies cool, dust with sifted powdered sugar.
