Grilled Vegetables with Hot Bacon Dressing is my recipe of the day with the blogging group Alphabet Recipe Challenge. We are working our way through the alphabet with recipes of ingredients starting with a consecutive letter. This week we are on the letter “G” and will be working our way through with new posts every other week. Glad you could join us!

For my recipe I decided to make some grilled vegetables. This way I could grab a bunch of different types. And not have to worry about different ways to do them. Just grill them all.

One way I like to do green beans is with a hot bacon dressing. And since those were included in the veg mix, I went with that for flavors. I knew the dressing would go with everything.

And it’s not so much a salad dressing as it is a seasoning sauce. We all enjoyed this. I hope you do as well. And go ahead and try some thigs in your veggie box. It’s amazing how well they turn out. Especially for a cookout.

Equipment

  • 1 Grill
  • 1 can Weber grill spray

Ingredients

Vegetables:

  • 1 pound white creamer potatoes halved
  • 1 pound stringless green beans trimmed
  • 2 red bell peppers sliced
  • 1/2 large sweet onion sliced
  • 2 teaspoons olive oil

Hot Bacon Dressing

  • 1/4 cup bacon drippings
  • 1/4 cup apple cider vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon celery seed
  • 2 teaspoons minced garlic
  • 6 slices bacon cooked crisp and crumbled

Instructions

  • Prep vegetables and set aside.
  • Cook up bacon and save the drips for the dressing.
  • Combine all the dressing ingredients except bacon crumbles in a bowl.
  • Heat grill; spray grill screen with grilling spray.
  • Toss veggies with olive oil and grill until tender, removing each type as it becomes done to your preference.
  • Heat dressing in a small sauce pan and toss with grilled vegetables; sprinkle with bacon right before serving.
