Summery Czech Cucumber Salad is my recipe of the day is with the blogging group Eat the World. We gather on the tenth day of the month to share a recipe from a different country that we haven’t “been to yet”.

This month we are off to the Czech Republic, formerly part of Czechoslovakia, and before that, known as Bohemia.
My choice of recipe is for the common cucumber salad often prepared in the Czech Republic- Okurkový Salat as it is called in the mother tongue. Which is just another way of saying Cucumber Salad.
I have noticed most cucumber salads of that region tend to be simpler. The simplicity reminds me of things like Vietnamese quick pickle which you might serve on a Bánh mì sandwich or as part of a plate of broken rice. It’s probably the light sweetness which I crave. And that paired perfectly against a backdrop of a hellishly spiced stir-fry. And no, not all Vietnamese food is so spicy. But I do tend to enjoy it as I am able.
Against the backdrop of Czech food. I imagine tender braised meats simmering away in a sauce imbued with the gentle spiciness of paprika. And knowing me, I’d manage to get some sauerkraut and carrots in there. With some rice on the side with pinch of these sweet grated cucumbers. #chefskiss

Summery Czech Cucumber Salad
Equipment
- Box grater or equivalent
Ingredients
- 2 English cucumbers grated
- 2 tablespoons white vinegar
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 cup hot water
Instructions
- Dissolve sugar in the hot water with vinegar, salt and pepper.
- Stir in the grated cucumbers and chill before serving.

Grating the cucumbers is a different technique than I have used. Cucumber salads are always a great dish to have on hand.
When I saw the technique they use for their cuke salad I knew I wanted to try it.
My brain immediately went to Vietnamese carot salad with their nuoc cham and rice on a broken rice dinner. Next incarnation of this is heading in that direction, maybe as a side to grilled chicken and a runny egg in there someplace too.
Ooh, this looks really good. I’ve never made a cucumber salad quite like this before.
I love the mix of sweet and tangy flavors here. I love the texture of the grated cucumber, too.
