I am sharing my recipe for dill vinegar cucumber salad which I made using dill vinegar.
My dill vinegar is a recipe I have shared before. I make my dill vinegar in the summer when whole heads of dill are available from the garden of farm markets.
I won’t always have it, so I want to infuse my vinegar to make sure I get that delicious flavor later.
It is perfect for pickles or marinated salads.

Dill VInegar Cucumber Salad
Ingredients
- 2 cucumbers partially peeled and thinly sliced
- 1 medium red onion thinly sliced
- 1/2 cup granulated sugar
- 1/2 cup boiling water
- 1 teaspoon each salt and black pepper
- 3/4 cup dill infused vinegar (use my recipe linked in this post)
- 1/4 cup vegetable oil
Instructions
- Whisk sugar in boiling water with salt and black pepper until sugar dissolves.
- Add to remaining ingredients and marinate 2-3 hours before serving.
