Dill Pickle Pasta Salad is my recipe of the day. It is a popular choice for summer noodle salads. Bring it to a picnic or a barbecue and watch it disappear.

Can I customize with other ingredients?
Of course. I would suggest adding in diced ham, diced Swiss cheese or cubes Cheddar as options.
You can add the ham right away but the cheese is best added just before serving.
What can I serve Dill Pickle Pasta Salad with?
I think this is best served as a Summer side dish for cookouts and picnics. I would suggest Sub sandwiches with ham. This is also great as a side dish for burgers and grilled hot dogs.
How much pasta should I use?
You will be adding about six cups cooked rotini or macaroni noodles. That is about 3 cups uncooked, and expands to double in size.
This will help you if you cook from scratch, or have leftover noodles or want to use precooked in the package.

Dill Pickle Pasta Salad
Ingredients
Pasta salad:
- 6 cups cooked rotini or elbow macaroni
- 2 hard cooked eggs peeled and chopped
- 1 cup chopped dill pickles
- 1 cup chopped scallions
- 1 tablespoon chopped Italian parsley
Dressing:
- 1/2 cup sour cream
- 1/2 cup prepared ranch dressing
- 1/2 cup mayonnaise
- 1/4 cup dill pickle brine
- 1 teaspoon dill weed
- 1/2 teaspoon celery seed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Whisk together the dressing and fold in the other ingredients.
- Chill before serving.
