Dill Pickle Pasta Saladย  is my recipeย  of the day. It is a popularย  choice for summer noodle salads. Bring it to a picnic or a barbecueย  and watch itย  disappear.

Can I customize with other ingredients?

Of course. I wouldย  suggest addingย  inย  diced ham, diced Swiss cheese or cubes Cheddar as options.

You can add the ham right away but the cheese is best added just before serving.

What can I serve Dill Pickle Pasta Salad with?

I thinkย this is best served as a Summerย side dishย  forย cookouts and picnics. Iย would suggest Sub sandwichesย  with ham. This is also great as a side dish for burgers and grilled hot dogs.

How muchย  pasta should I use?

You will be adding about six cups cookedย  rotini or macaroni noodles. Thatย  is aboutย  3 cups uncooked, and expands to double inย  size.

This will helpย  you if you cook from scratch,ย  or haveย  leftover noodles or want to use precooked in theย  package.

Ingredients
  

Pasta salad:

  • 6 cups cooked rotini or elbow macaroni
  • 2 hard cooked eggs peeled and chopped
  • 1 cup chopped dill pickles
  • 1 cup chopped scallions
  • 1 tablespoon chopped Italian parsley

Dressing:

  • 1/2 cup sour cream
  • 1/2 cup prepared ranch dressing
  • 1/2 cup mayonnaise
  • 1/4 cup dill pickle brine
  • 1 teaspoon dill weed
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Whisk together the dressing and fold in the other ingredients.
  • Chill before serving.
