Danish Grilled Salmon with Mörk Sauce is my recipe of the day. A Scandinavian inspired recipe was put together by me using Mörk sirap (syrup) with some other flavors that might be seen in a Danish Rijsttaffel and the grilled fish is it.

Generally, a rijsttafel, or rice table, would include a lot of different Indonesian foods to be served with rice, in the tradition of Danish colonists in Asia.
As a matter of fact, Mörk sirap is made from sugar beets. As is done around the world and dark syrups and molasses made from many ingredients. You can get this at a specialty grocer, or substitute with a light molasses. It will provide necessary sweetness to the sauce as well as a depth of flavor.

Danish Grilled Salmon with Mörk Sauce
Equipment
- 1 outdoor grill
- 1 nonstick grill mesh or fish basket
Ingredients
Fish:
- 1-1/2 pounds fresh salmon fillet
Marinade:
- 2 tablespoons Mörk Sirap beet molasses; may substitute molasses
- 1 tablespoon soy sauce
- 2 teaspoons minced garlic
- 1 teaspoon grated ginger
- 1 teaspoon red wine vinegar
- 2 tablespoons honey
- 1 teaspoon kosher salt
- 1 tablespoon olive oil
Instructions
- Mix marinade and pour over fish; let rest one hour.
- Drain marinade, lightly oil fish and season with salt and black pepper.
- Grill fillets over moderate heat using a grill mesh or fish basket, skin side down for several minutes then gently turn.
- Brush with marinade as it cooks and continue grilling until fish is 135F-140F.
