BLT Roll-Ups is my recipe of the day. I haven’t posted in a bit. And those who know me know that I am currently battling cancer. I am doing okay right now. But my treatment will be ongoing for some time. So be prepared if you see me take days off here and there  and everywhere.  I  am not planning to disappear.

Often my post will be with a group but I will be going solo for a bit until things get back to normal. I was having to cancel  more than a few times which bothered  me a  lot. For now I am just hoping to get things up and going.

BLT Roll-Ups

This recipe  seems perfect for me to have as back to school lunches or even snacks. The slices pack well  into Bento boxes or lunch containers. So with fresh fruit and cut  veggies it makes a wholesome lunch addition.

I also think it goes great alongside soup such as tomato. So either  way- at school or at home this should set you up. And surely everyone likes things thought out so last minute worries won’t throw a wrench into the weekly plan.

Ingredients
  

  • 3 roma tomatoes sliced thin and patted dry
  • 8 ounces cream cheese at rom temperature
  • 1/4 cup sun-dried tomato pesto
  • 1 pound bacon cooked crisp
  • 6 cups kale or lettuce
  • 5-6 sun-dried tomato flavored sandwich wraps

Instructions
 

  • Stir together the cream cheese with the pesto until smooth.
  • On each wrap, put 1/4 cup spread, along with some of the tomato, lettuce and bacon.
  • Roll up wraps and secure with toothpicks; chill until firm.
  • Slice into pieces as desired.
