Banana Mango Overnight Oats is my recipe of the day for Back to School treats week. For this event, I will be posting several times this week. Of those, I will be posting recipes that kids will enjoy for breakfast, snacks and dessert.
Monday I posted Monkey tail crescent rolls, a sweet treat filled with banana and chocolate and drizzled with caramel. They are easy and good.
Today I am moving forward to breakfast with an easy no-cook recipe for oatmeal. I like stirring this up the night before and letting it sit in the fridge overnight. In the morning it is easy to spoon out and top with some extra banana or other fruit (I added raisins in the photo).
Sometimes I top with a little crunch mix of granola, toasted nuts or coconut. I try to keep a small tub of something like that in the pantry so I can just grab and go.
I like to eat overnight oats cold, but if you want it is pretty easy to nuke a bowl to warm it up.
The extras will keep in a jar for days so don’t worry if you don’t eat it all at one sitting. I like the handy nature of having foods prepped and ready to eat. In autumn you will find me keeping containers of soup at the ready. Even if as a food blogger cooking is one of my favorite things in the world, even I need a day off sometimes. Don’t you?

Ingredients
- 1/2 cup unsweetened coconut-hemp milk
- 1 tablespoon honey
- 1/2 cup old-fashioned oats
- 5 ounces Yoplait Oui Mango yogurt
- 1/2 cup diced ripe mango
- 1/2 cup diced ripe firm banana
Instructions
- Place in a quart jar and refrigerate for at least 4 hours or overnight.
