Pina Colada Overnight Oats

My recipe of the day is for overnight oats for Fantastical Food Fight, which I have done in the flavor of pina colada (pineapple and coconut) which I love.
This is very easy to make, simply by stirring together and refrigerating overnight, without any cooking involved. In the morning you spoon out your desired portion and sprinkle with toppings. It tastes good either warm or cold (you decide).
Perfect for a busy weekday, you can make this ahead for your tribe, and they can serve themselves. The extras will keep several days so no worries if you want to make some even further ahead.
The oatmeal naturally softens in the liquid. The flavor is tangy from the yogurt, but the sweetness is balanced (from the yogurt additions) but as in any group, everybody likes a different amount of sweet, so there is no judging if you want to add a little honey or brown sugar. I liked it just as it is. But I do figure kids might want more (or maybe not…)

Overnight Oats
Pina Colada Overnight Oats

Yield 1 quart
Ingredients:
- 1 cup old-fashioned oats (uncooked)
- 1-1/4 cups unsweetened coconut milk
- 1 (5 ounce) jar Yoplait Oui Coconut French style yogurt
- 1 (5 ounce) jar Yoplait Oui Pineapple French style yogurt
- 1/2 cup canned crushed pineapple
- 2 tablespoons chia seed
- pinch salt
- 1/4 cup toasted sweetened coconut
- 1/4 cup chopped toasted Macadamia nuts
Method:
- Stir together ingredients (except toasted coconut and macadamias, which are toppings) and refrigerate in a quart canning jar for 4 hours or overnight.
- Serve warm or chilled, topped with toasted coconut and macadamia nuts, testing to see if you want to add any more sweetener.
