The summer season is upon us and that means meals are moving outdoors! There is plenty  of sunshine and gathering with family and friends in backyards everywhere, or in parks and at beaches- for our annual traditions of cookouts, potlucks and picnics.

What better to enjoy than a favorite potato salad?

I’ve gathered a collection  of favorites that I have posted here at Palatable.

Serving tip: since many  of these contain mayonnaise and/or  egg, it is important to keep these at a cool serving temperature. Keep well  chilled and when  serving, it is a cool idea to set the serving bowl nested in another bowl filled with ice. Don’t set the food out in advance of serving time, and  once service is finished,  don’t let it sit there, but discard any  unused portion. No  one wants food poisoning- and  this is true not only for these type of salads but also for meats and other side dishes.
