My recipe of the day is for a poppyseed dijon slaw, which I am  sharing as a part of  a group effort to celebrate Farmer’s Market week.

This is something  I first made last year when I was doing WW  for awhile.  It clocks in at 0 Smart Points, so feel free to eat it to your hearts delight,  or  until  you  get full.

If you are not dieting and want to use  regular  sugar  instead of Splenda, just sweeten it  to taste. You can  also try  using something  like Swerve sweetener  (erythritol) or if you are doing  keto, then honey. Just be aware that honey is not low carb.

In my notes I have this down as having been served with baked fish. Although I am  also fond of fried fish.  And from  time to time I like piling slaw on top of my Carolina style pulled pork.

Poppy Seed Dijon Slaw

Chill and marinate 3 hours

Ingredients

Ingredients:

  • 12 ounces shredded green cabbage
  • 1 cup chopped fresh broccoli florets
  • 1/2 cup grated carrot
  • 4 scallions sliced

Dressing:

  • 1/2 cup cider vinegar
  • 1/3 cup Splenda granular
  • 1 tablespoon Dijon mustard
  • 1 teaspoon poppy seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Mix and marinate for 3-4 hours.
