Chocolate Avocado Walnut Muffins is my recipe of the day with the blogging group Muffin Monday. This is a recipe I have had around for awhile but posted on another website. I have decided to bring it over to the blog to be part of my larger collection.

These are very moist muffins, owing in large part to the avocado oil  in the fruit. Avocado has a very mild flavor that blends in. We can debate whether someone can taste it or not- and having eaten these, I can tell you that if someone told you there was avocado in it, you might think about it and say, “Yes, that’s right.”

But in any case the flavor is not strong, in the same vein that zucchini can be added to muffins and just disappear. I like them because they are essentially oil-free (except yes, avocado contains avocado oil).

They aren’t considered diet muffins my any stretch, but you may enjoy these, as I do. I’ll probably make some other avocado muffins in the near future, perhaps savory. Funny how my brain heads straight for bacon. But as a breakfast item, why not? It’s fun to play with your food.

Ingredients

  • 1 ripe avocado
  • 3/4 cup granulated sugar
  • 1-1/4 cups buttermilk
  • 1 large egg lightly beaten
  • 1-1/2 teaspoons vanilla extract
  • 1-3/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup shelled walnuts chopped and divided

Instructions

  • Preheat oven to 375°F./190°C.
  • Mash avocado with sugar in a mixing bowl (makes it easier to get the avocado smooth).
  • Add all remaining ingredients except reserving 1/4 cup of the chopped walnuts.
  • Place batter 2/3 full in cupcake paper lined muffin tin for about 18-20 muffins
  • Sprinkle batter with the reserved walnuts.
  • Bake for 20-25 minutes or until a toothpick can be inserted and removed without wet batter.
