Blueberry Oat Flour Muffins is my recipe of the day with the blogging group  #MuffinMonday. We get together monthly to  share our newest favorite muffin recipes.

And this month I was eager to share my recipe for blueberry oat flour muffins. Blueberries always make me think of Springtime. Although they are available year-round.

Plus blueberries are a favorite of almost everyone. Their fruity addition to muffins along  with healthy oats and oat flour make breakfast a real treat.

I already have a similar recipe for blueberry oatmeal muffins on the blog,  but this one is slightly different in that it uses oat flour and the other does not.

They are different enough that you might like one or the other.  Or perhaps you’d  like both.

Equipment

  • muffin tin

Ingredients
  

Muffins:

  • 1 cup whole grain oat flour
  • 1-1/2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1-1/2 cups fresh blueberries rinsed and drained
  • 1 cup milk
  • 2 teaspoon vanilla extract
  • 1 large egg

Top sprinkle:

  • 3 tablespoons oats
  • 1-1/2 teaspoons flour

Instructions
 

  • Preheat oven to 400F.
  • Spray 16-18 cup muffin tin with baker's release spray, heavily grease, or use paper liners.
  • Mix dry ingredients in mixing bowl, then add blueberries and toss to coat with the flour.
  • Mix the other wet ingredients separately then stir them gently into the flour and blueberries to combine.
  • Divide batter among muffin cups.
  • Mix the oats and flour for a topping and sprinkle onto batter and tap down lightly to ensure it sticks.
  • Bake muffins for about 20 minutes or until a toothpick inserted does not come out with wet batter clinging to it.
  • Cool in pan ten minutes, then turn muffins out and finish cooling on a wire rack

  1. Do you buy the oat flour or just grind up oats to make it, Sue? It’s such fun to bake with different flours. Your blueberry muffins look lovely!

    • I’m lazy. I just buy about one pound worth and use that up easily in various things, mostly pancakes. Although I should buzz some up and see how it compares.

  2. Blueberries always remind of springtime for me too. I love blueberry muffin and these made with oat flour are a healthy version! Delicious muffins!
