Ginger Spiced Pickled Figs  is  my  recipe of the day with the blogging  group Sunday Funday.  We get together on Sundays to share   recipes on a common  topic.  This week we are posting recipes that include ginger.

Ginger Spiced Pickled Figs

I am sharing my recipe for ginger spiced  pickled figs. This time of year fresh figs are plentiful so  it’s perfect. Easy to  make, you can get a jar going  in your fridge in just minutes.

After a few days,  the syrup  has perfectly soaked them in flavor. Then  they are perfect as they are, served with cheese on a platter or charcuterie board, or placed on a cracker with whipped cream cheese or soft goat cheese.

You’ve probably noticed by now that I  like  lots of things on  crackers  with goat cheese. And of  course I am going  to share  my  best creations  of those with you.

The ginger  and spices give the figs a little sultry  bite and everything just works out. But don’t just dump  that syrup  when  you  are done. Try adding  a little to  your homemade vinaigrettes afterward  or use it again to pickle something  else. It is loaded with the wonderful flavors of fig and spice.

With my extras,  I am thinking of dropping in some feta cheese and nicoise olives and see what happens. Be adventures that way! You might be amazed at your discoveries.

Ingredients
  

  • 1 pint fresh green Calimyrna figs
  • 1-1/2 cups granulated sugar
  • 1 knob fresh ginger (peeled and sliced)
  • 1 cinnamon stick (4 inch)
  • 1/4 teaspoon whole cloves
  • 1/4 teaspoon whole allspice
  • pinch salt
  • 1/2 cup white wine vinegar
  • 1/4 cup white balsamic vinegar
  • 1/2 cup fresh apple cider

Instructions
 

  • Slice the figs in half and place in a canning jar.
  • Mix the remaining ingredients in a saucepan and bring to a boil, stirring to make sure sugar is completely dissolved.
  • Pour over the figs in the jar.
  • Allow the jar to cool down to room temp, then cap and put in the fridge.
  • Best eaten after several days to give time to meld flavors.

  1. Off to look for the correct fresh figs. If I’m lucky, I’ll find some small peppers to use for the pickled sport peppers too! Thank you.

    • My issue is finding them fresh. I am very picky and they are so perishable. Probably why they cost a lot. But one box of figs is worth it for this one.

    PS – am eyeing that ginger fig jam too – always a sucker for mild savory-sweet combos like that!

  3. Love the idea of serving ginger spiced pickled figs on a cracker with some goats cheese or cream cheese. Love pickled figs but didn’t know that it is so easy to pickle them at home. Lovely recipe Sue.
