Honey Pistachio Roasted Salmon is my recipe of the day with the blogging  group Fish Friday Foodies. We enjoy posting recipes together monthly using the same topic. This month we are sharing recipes for roasted fish.

I decided to  share a recipe for pistachio roasted salmon since I had the nuts and salmon already and it always makes an easy type  of fish to bake up.

Since I was  using  pistachios, I thought it might be  nice to add some spices that would have sort of a North African  or Moroccan feel. And use honey, which is  a  beloved ingredient  there to stick  the nuts to the fish.

It makes a really wonderful and easy recipe which is  perfect for both special occasions or  just everyday.

Ingredients

  • 1-1/2 pounds salmon filets
  • 1-2 teaspoons olive oil
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey
  • 1/2 cup shelled pistachios (chopped)
  • 2 teaspoons extra honey
  • lemon slices

Instructions

  • Preheat oven to 425F.
  • Place fish filets on a nonstick foil lined baking sheet.
  • Drizzle fish lightly with oil then gently rub the spices onto the surface.
  • Drizzle again with honey and lightly press the chopped nuts onto the fish.
  • Drizzle tops with the last bit of honey.
  • Roast/bake fish for 15-20 minutes or until cooked to your liking.
  • Serve with lemon.
