Roasted Beet Salad with Horseradish Dressing is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring salad recipes. Glad you could join us!

Today’s recipe is a roasted beet salad with a homemade horseradish dressing. I’m a big fan of beets, whether pickled or roasted. In fact, I’ve enjoyed pickled beets since I was a kid. Roasted beets are tasty, too, and quite versatile.
Time was if you wanted roasted beets, you had to pick up some fresh whole beets, roast them, let them cool, and peel them. That step unfortunately turned your fingers red. You’d end up looking you’d just come from some terrible crime scene. LOL Lots of hand scrubbing required afterward for sure!
These days you can find packaged beets that have already been roasted and peeled. I really like those – they save time and trouble. And they’re ready to use whenever you need them. Not a whole lot of advanced planning required.
You can use whichever you prefer, of course.
The horseradish dressing for this is creamy and mayo based. It whips up easily and quickly, and the flavors go really well with the salad. I do hope you enjoy!

Roasted Beet Salad with Horseradish Dressing
Ingredients
Salad:
- 1 head red leaf lettuce chopped
- 16 ounces roasted beets rinsed and drained
- 1/2 red onion shaved
- 1/4 cup roasted salted pumpkin seeds pepitas
Dressing:
- 2 tablespoons cream style horseradish
- 1/4 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
Instructions
- Slice beets or cut into chunks.
- Arrange beets and shaved onion over greens.
- Whisk together dressing and drizzle over salads.
- Sprinkle with toasted pepitas.

Like how you’ve paired red ingredients for this beautiful salad. Pungent taste of horseradish compliments the sweetness from the roasted beet.
I have never made a horseradish dressing, but we LOVE horseradish. I will have to try it soon.
