Wheaties muffins is my recipe of the day with the blogging group Muffin Monday. We post monthly on the last Monday of the month.ย  However,ย  this is the final installment of the group after many years. Thank youย  for following the group all this time!

Wheaties Muffins

For my selection, Iย  decided on Wheaties Muffins, which is not my personal recipe (NMR) but comes from a 1940 Betty Crocker recipe.

I’dย  spotted this shared online and have been wanting to try them, since my exploits into “T&T” raisin bran recipes have many times crashed and burned.ย  I’d tried several,ย  and they all failed for one reason or another. I’ll get back to those sometime and workout the issues.

It is suggested to try these warm with butter. I’d also tryย  peanut butter and banana slices.

As far as prep comments on these,ย  I did find the batter volume to be a little scant. Perhaps we can attribute that to the recipe’s era. I don’t recall super huge muffins evenย  from my earliest memories. Feel free to cut back to 10 muffins if it works out better for you.

Equipment

  • 1 12-cavity muffin tin greased or sprayed with Baker's release

Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1 egg lightly beaten
  • 1/2 cup milk plus 2 tablespoons
  • 4 tablespoons butter melted and cooled
  • 1/2 cup golden raisins
  • 2 cups Wheaties cereal

Instructions
 

  • Preheat oven to 400F.
  • Grease muffin tin or spray with Baker's Release spray.
  • Stir together flour, sugar, salt, and baking powder.
  • Mix in beaten egg, milk and cooled melted butter.
  • Fold in raisins and cereal.
  • Divide batter among 12 cups of a muffin tin.
  • Bake for 18-22 minutes or until browned and firm.

  1. I love vintage recipes because they have (generally) stood the test of time. These look and sound tasty, Sue, with the added benefit of the extra fiber we all need in our diets. I don’t have Wheaties but we always have bran flakes in the pantry so I will give them a try with those.

    • They certainly should work with bran flakes and be better than the bran recipes I have tried. I’d got the Wheaties on a deep sale and Bill eats more cereal than I. And spotting the clip I thought they were worth a try.

  2. I grew up with Wheaties and loved them! These muffins sound great, and wow, they do actually still make Wheaties, I always wonder if it has faded away. I remember when Mary Lou Retton was on the box…

    • They still make it although it might be harder to find in a jungle of Cheerios in every flavor and color they can make just to take more space in the aisle.

  3. Did it have that “grand nut-like” flavour all the way through? I need to Google Wheaties. I’m not sure if I’m picturing the right cereal. Love the historical touch!

    • They taste like wheat in a bran muffin. I probably wouldn’t say “grand nut-like”. I did add raisins and that stood out. You could add some nuts instead. Perhaps they meant more “nut-like” to those who had no nuts in their life or more “nut-like” than corn flakes or maybe they meant mental. rofl
      Kind of like ads that said margarine tastes like butter.
      Yeah, right. Only butter tastes like butter. Even ghee isn’t that buttery with dairy solids removed. Haha

    • Yes. Clothing sizes too. People want their clothes to seem a smaller size and their pop in a huge cup. And I never saw a jumbo bakery muffin as a kid- they were all dinky. And easier to portion that way, especially with kids.

  4. Even with today’s recipes I rarely get what’s called for because I like to fill my muffin tins to the top ๐Ÿ™‚ I also have had little luck with the raisin bran varieties but definitely want to give these a try, they’ll make great lunchbox treats for my guys.
