Holiday Rum Balls is my recipe of the day for the blogging event Christmas Sweets Week. This is an annual event that I have participated in for a few years now. It gives me and a number of bloggers the chance to share a few more of our holiday recipes besides the Christmas Cookies event we did a few weeks back.

This recipe is a traditional one, although recipes may have minor differences here and there. At the core are the cookie crumbs with Nilla Wafers being the usual choice.
Rum is also an addition and I tend to tone mine down since I don’t want them tasting like gasoline. If you eschew booze, you can also choose to use a syrup instead.

Holiday Rum Balls
Equipment
- Food Processor
Ingredients
- 11 ounces vanilla wafer cookies
- 1 cup toasted pecans finely chopped
- 2 tablespoons baking cocoa
- 2 teaspoons vanilla powder
- 1 cup sifted powdered sugar
- 1/3 cup light corn syrup
- 2 tablespoons melted butter
- 1/4 cup rum
- 1-1/2 cups powdered sugar to roll cookies in
Instructions
- Pulse cookies in a food processor. You should get about 3-1/2 cups crumbs from the box.
- Add remaining ingredients and work into a dough.
- Use a cookie scoop to measure dough and then roll into balls.
- Place on waxed paper and chill until firm.
- Once firm, roll in additional powdered sugar and keep chilled. Flavor is best after it rests a few days.

I like that these are rolled in powdered sugar. I suck at rolling in chocolate. And the flavors in there sound delicious.
