Sauteed Garlic Spinach Agrodolce is my recipe of the day with the blogging group  Festive Foodies as we celebrate recipes for National  Garlic Month.

I love  baking up  roasted  garlic and  using it in a number  of different recipes. You can find  my recipe to prepare that here:

Roasted Garlic

You can also buy that at some grocery stores that have olive  bars. But it  is really not hard to do.

This recipe adds in caramelized shallots along with Trader Joe’s agrodolce  white wine  vinegar. Greens always taste better with a splash of  vinegar. The agrodolce vinegar  is very flavorful, and quite a bit  more delicious than  other  vinegars. I recommend it.

Ingredients

  • 8 ounces fresh baby spinach leaves
  • 1/4 cup chopped shallots
  • 1/4 cup roasted garlic cloves
  • 2 tablespoons butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 teaspoons white wine vinegar (Trader Joes white wine agrodolce vinegar)

Instructions

  • Sautee shallot and garlic until shallot softens.
  • Add baby spinach leaves to pan and season with salt and pepper.
  • Toss just until leaves wilt and remove to serving plate.
