Shaved Brussels Sprouts Salad is my recipe of the day for the blogging event Cranberry Week. Each year we all get together to share some of our favorite cranberry recipes. And we’ve been doing this for years now.

It’s lots of  fun and everyone gets to enjoy finding new and delicious ways to use up some cranberry ingredients.

Shaved Brussels Sprouts Salad

Ever since we learned about roasting Brussels Sprouts instead of boiling them they’ve been a favorite in our household. But they’re also delicious raw, shaved thin and turned into a salad.

I decided to include craisins (dried cranberries), red onion, walnuts and bacon in this salad. Then dressed it with a vinaigrette made of agrodolce (a sweet and sour vinegar mixture with grape must added) I found at Trader Joe’s earlier this year and maple syrup.

I really love that agrodolce! It’s versatile and flavorful. Dried cranberries and walnuts are a great combo, too. And one can never go wrong adding some bacon to a salad. At least not around here!

Ingredients
  

  • 16 ounces fresh Brussels sprouts shaved or thinly sliced
  • 1 cup toasted chopped walnuts
  • 1 cup dried sweetened cranberries
  • 6 slices bacon cooked crisp and crumbled
  • 1/2 cup chopped red onion
  • 1/2 cup maple syrup
  • 1/2 cup agrodolce white wine vinegar Trader Joe's
  • 4 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Toss together ingredients and chill briefly.
