Grilled Vegetable Agrodolce Crostini is my recipe of the day. As I am posting with the blogging group From Our Dinner Table. We group weekly to post new recipes on a variety of common topics. This week we are sharing recipes for crostini.

I settled on making some crostini with grilled vegetables since we are now in full summer mode. No heating up the kitchen here, as the cooking is all done outside.
I used Trader Joe’s ready to go agrodolce. This “must-have” TJ’s item is a sweet and sour vinegar mixture with grape must added. It is drizzled on the vegetables as they cook and a little afterwards to adjust the taste.
Combined with the olive oil used in cooking, the flavor it gives is one of a deeply complex vinaigrette with light tangy sweetness.
I paired the vegetables on the crostini with a schmear of goat cheese. Also, a simple pinch of prosciutto ham. And a small basil leaf for the finishing touch. Figure on four per serving. So this recipe makes enough for 4.
I did use only half the baguette. But you can easily double the recipe and make the whole thing if you need. Depends on the size of your crowd or cookout.

Grilled Vegetable Agrodolce Crostini
Equipment
- 1 outdoor grill
Ingredients
- 1/2 French baguette loaf
- 4 ounces chevre soft goat cheese
- 3 ounces thinly sliced prosciutto
- 16 fresh basil leaves
- 1/4 cup Trader Joe's Agrodolce white wine vinegar (with grape must)
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 red bell pepper
- 8 ounces fresh zucchini
- 5 ounces Japanese eggplant
- 5 ounces thickly sliced onion
Instructions
- Slice bell pepper, zucchini and eggplant, then drizzle lightly with oil and agrodolce vinegar, season with salt and pepper and grill until tender.
- Slice baguette into thick coins. Drizzle or brush lightly with oil and grill a few minutes until toasted.
- Chop vegetables and drizzle again with agrodolce to taste.
- Spread crostini toasts with soft goat cheese, then add grilled vegetables, pinches of prosciutto and a basil leaf.
- Serve warm.
