Hawaiian Plate Lunch Macaroni Saladย is my recipe of the day with the blogging group Sunday Funday. We group weekly to post new recipes on a variety of common topics. This week we’re featuring recipes that are lunchbox favorites. Glad you could join us!

For my selection I decided to make some traditional Hawaiian macaroni salad which is often served with lunches. A few years back I had posted a not the recipe for Hawaiian macaroni salad. Which is really more just inspired by traditional Polynesian food that you might have eaten back in the ’50s and 60s. It included such things as ham and pineapple and such.
This one’s probably more like what you would get if you went to a Hawaiian restaurant. Or had in the Hawaiian Islands served at a luau. Often for lunches Hawaiians will serve macaroni salad or potato salad Hawaiian style along with some rice or you might get something like papaya salad. And this will be served even either with something like chicken or beef sticks or other Hawaiian entrees

Hawaiian Plate Lunch Macaroni Salad
Ingredients
- 2 cups uncooked macaroni
- 1/2 cup chopped onion
- 1/2 cup grated carrot
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 teaspoon celery seed
- 1 scallion thinly sliced
- 1 tablespoon granulated sugar
- 1/2 teaspoon freshly grated ginger
- 1 cup mayonnaise
Instructions
- Cook macaroni according to package directions then drain.
- Combined drained macaroni with remaining ingredients thoroughly and chill before serving.
- Makes five cups

Your salad looks tasty, Sue! I am intrigued to read that it’s often served with rice though. Seems like the macaroni would be carbs enough but I won’t complain! Bring it on.
I thought the same thing but I think restaurants do it for the same reason Tex-Mex places double down with rice and beans. With rice it’s good to soak up the sauces for entrees like shoyu chicken. When Bill and I ordered we’d get a plate with two sides and split, ordering the meat sticks ala carte for the other. At home we just eat less. Especially since I have been doing intermittent fasting for weight loss and I have to leave room for my veggies or I would miss out and lose my mind. Gotta have veggies! ๐
My friend made this for me upon returning home from Hawaii. It was delicious.
Any pasta salad is welcome in our home. Though I would add a bit of pineapple to give it that Hawaiian feel. Such an easy salad to put together in a short time.
