Originally I just wanted these to be a simple variation of the Brookie, which I had made last year when I was given a free package of brownie mix by a local grocer as part of a promotion. Normally I might make my brownies from scratch.

But I did realize that as the holidays approach, it becomes “crunch time” in the kitchen, so using some packaged products to help things move along that you might ordinarily make from scratch might be perfectly acceptable, and it is.

I enjoyed the Brookies so much that this year, I wanted to do some but since I rarely return to any given recipe idea (there are just too many recipe ideas, too little time!) I decided to change it up. I was just going to pop a Rolo inside them and thought to myself “this is sort of like a car bomb!” And from there, thought to flavor them with Irish Cream and frost them as well, which really doesn’t add that much work, since I could make a frosting easily in a few minutes with cream cheese.

So technically, this is really not like the car bomb drink, which I have seen some brownie recipes replicate, using Guinness stout as part of the batter. And those recipes are fine ideas. Just don’t confuse this recipe for that type.

But this recipe is easy enough, and the frosting really does set it over the top. It is perfect (if I must say so myself) since I really don’t like overly sweet frostings, which can be cloying and unpleasant. This one is creamy and buttery with just enough sweet. And the caramel inside? That just speaks volumes on its own.

Caramel Car Bomb Brownies

  • Servings: 12

Caramel Car Bomb Brownies
Ingredients:

  • 1 (18-ounce) box fudge brownie mix
  • 2 large eggs
  • 2/3 cup vegetable oil
  • 1/4 cup Bailey’s Irish cream liqueur
  • 12 Rolo caramel candies, unwrapped

Icing:

  • 4 ounces softened cream cheese
  • 2 tablespoons softened unsalted butter
  • 1/2 cup sifted powdered sugar
  • 1-1/2 tablespoons Bailey’s Irish Cream liqueur

Topping:

  • 12 Rolo caramel candies, unwrapped
  • grated bittersweet chocolate or chocolate sprinkles (optional)

Method:

  1. Preheat oven to 350F.
  2. Grease a 12 cup muffin tin or line tin with cupcake papers.
  3. In a mixing bowl, whisk together the eggs, oil and Irish Cream.
  4. Stir in the brownie mix until blended and smooth.
  5. Divide batter among muffin tin cups.
  6. Sink a rolo into the batter of each cup.
  7. Bake at 350F for 30-35 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes, then run a knife around the edges of brownies and turn out of pan; cool completely on a wire rack.
  9. When brownies are cool, whisk together icing until smooth.
  10. Ice tops of brownies and place a rolo on top along with grated chocolate for garnish/decoration.
  11. Serve immediately or store brownies in an airtight container in the refrigerator until needed.
